What is National Carrot Cake Day
National Carrot Cake Day is a day to enjoy a very tasty cake. I mean, why not have a day to celebrate carrots and cake? It gets us ready to enjoy spring when we see the rabbits more…and we all know rabbits love carrots.

Even if you don’t like carrots by themselves, I think you’ll love a carrot cake. It’s a classic dessert and for me, it’s always a favorite for the spring but why not celebrate it early?
Why do I love carrot cake in the spring?
If you’re like me, you love to garden. And, I start getting my carrots ready to plant in the spring. It gives me something to do because it’s a great hobby. Plus, it gets me excited for the warm weather and that’s especially welcome on these cold winter days like we’re having today for National Carrot Cake Day, February 3!

Carrots from the garden are delicious but I will admit that I don’t wait for my carrots to grow in the garden to make my carrot cake. That’s good news because it means that you don’t have to either – go grab your ingredients for your carrot cake now!
Carrot cake ingredients
So, what do you need to make your own carrot cake on National Carrot Cake Day?
Main ingredients:
- Sugar (of course!)
- Flour
- Baking soda
- Baking powder
- Cinnamon (I use lots of cinnamon in mine)
- Carrots (duh!)
- Salt
- Eggs
- Oil
I also add a secret ingredient to my cake…which is:
- Canned pineapple in it’s own juice (or) you can also use fresh pineapple that’s really ripe and juicy.
Or…
Just buy a carrot cake from the grocery store or stop at a local restaurant that serves it. It may not be as good as what you can make, but sometimes you just need cake!
Carrot Cake recipe
There are a ton of carrot cake recipes out there. Some use coconut but I don’t care for coconut so I omit it. Whatever cake recipe you use, don’t forget the cream cheese frosting. A simple recipe for cream cheese frosting is below.
Cream Cheese Frosting recipe
- 8 ounces cream cheese, softened
- 2 Tbsp. softened butter (unsalted)
Mix together until smooth, then add:
- 1-2 cups powdered sugar (depending on how sweet you like it)
- 1 tsp vanilla extract.
Whip together and top the cake with it. You can also add finely chopped walnuts after you frosting your cake. It gives it a great texture.
