I’m cuckoo for coconut sugar

Let’s talk sugar!  Coconut sugar that is because I’m cuckoo for coconut sugar!  And, it has a lower glycemic index!

What is coconut sugar?

Coconut sugar is also called coconut crystals or coconut palm sugar – although not to be confused with palm sugar which is different. It looks like raw sugar but where raw sugar is more in a crystalized from, coconut sugar is close to powdery (but isn’t quite there).  Amazingly, it does contain some minerals and antioxidants.  The minerals of iron, zinc, potassium and calcium aren’t quite enough in a serving to help much but it’s cool that they’re in there.  Plus, the antioxidants are a nice benefit.  In addition, there is a little bit of fiber in the sugar which could be why the glycemic index of coconut sugar is lower than your average “sugar”.  So, this is why I’m cuckoo for coconut sugar.

Calories

This is the downside to coconut sugar – it does have high calories (boo).  Still, I was super excited to try this.  I don’t eat much “sweetener” nowadays but I read that coconut sugar is great to use in recipes so I wanted to try it.  And, since it’s full of vitamins and minerals and you KNOW I love that, I thought it was worth the try!

If you are trying to rid your diet of sugar, this may be what you want to try.  We’ve all gone through it – especially when we were teenagers – we ate a lot of sugar.  And, we went through the teen acne phase.  For some people, it went away – for others, it is still an issue.  In any case, and whatever phase of life you are in, you should decrease your sugar intake and this may help you.

Have you ever tried coconut sugar and do you like it?  Have you tried it in baking / cooking?  How did it turn out?  I would love to hear.
