Rabbits! Carrots!
Carrots! It’s been such a cold winter and I’ve been making soup each week just to keep warm! And, this past week, it was time to make some carrot soup. Rabbits eat carrots raw but I found a recipe in one of my cookbooks and I couldn’t wait to try it.
Is soup good for you?
When we were young and got a cold or the flu, our parents gave us soup to fight the cold. But, did you ever wonder if soup was really good for you or was it just something you ate when you were sick? Well, I can tell you from all my research that there may be some health benefits to eating soup.
- First, soup warms you up. When you’re sick with an illness, you may have the chills and can’t get warm. Eating soup can warm you up and help you stay warm. I love the warming effect of soup.
- Next, when you eat a bowl of homemade soup, there are loads of vitamins in the soup unlike if you boil vegetables on their own like broccoli. The reason for this is that the vitamins stay in the liquid with soup. In the case of boiling other vegetables to eat on their own, you may over boil them which allows the vitamins to be leached into the water it is boiling in. But, this water is then sent down the drain (unless, of course, you save it for use later).
- Soup is a low caloric food. (Note, if you make a cream-based soup, this wouldn’t be the case.)
- It’s good for your wallet. Soup is so easy and economical to make. One pot of soup can feed you for a week!
Benefits of carrots
We all know that carrots are good for our eyes. The beta-carotene in carrots are absolutely essential for our eye health. But, did you know there are other benefits to eating carrots? Here are just a few:
- Healthy skin – eating carrots can really help your skin stay healthy, strong and vibrant.
- Great for the immune system
- Weight control
- Great for your heart and bowels
- Aids on blood pressure control
Carrots are so full of vitamins and beta carotene. That beta carotene turns into vitamin A giving you a nice glow to your skin. And, it may help with wrinkles and oily skin! How great is that? So, no matter what skin type you have, you could benefit from eating carrots. And, if you don’t like raw carrots, soup may be the next best thing. Plus, if you play sports, this is a great food to try – it’s so nutritious and satisfying.
So, just like rabbits eat carrots, carrots are eaten by so many for loads of different reasons. You can put them in soup, eat them raw or roast them. I’ve even made mashed carrots for a different meal. So, give it a try.
