No one wants to change their diet, especially if we’ve been so used to eating the foods we have been eating (and enjoying).  But, we need to at least make sure that the foods we are eating are nutritious and giving us what we need to sustain health.  I’ve been eating whole grains for a while now and I can tell you that it wasn’t that hard to change from the refined grains like white flour.  Sure, I eat the occasional pancake that is made with white flour, but I keep everything in moderation.  But, what’s this about buckwheat groats?

Buckwheat groats are my new best friend.  They are gluten free and although I don’t have a gluten sensitivity, I notice that when I make a breakfast porridge from my buckwheat groats, it stays with me a long time.  I don’t get hungry within an hour of eating breakfast so it helps with keeping my blood sugar in check.

Plus, I don’t feel bloated.  And, according to webmd, buckwheat has rutin and quercetin which is great for your blood vessels and for inflammation.  Inflammation can lead to acne so eating a healthy breakfast of buckwheat groats can help with bloating, blood sugar and acne.  When I notice that I feel better physically and mentally – and I look better (no acne), I’m hooked.  In addition, inflammation is caused by high blood sugar and this is the biggest reason why I started to eat buckwheat – it can cause insulin resistance and all the hormonal problems associated with it.

How to cook buckwheat porridge:

This is so easy!  For one serving:

  1. Measure out 1/4 cup of buckwheat
  2. Add 3/4 cup water
  3. Add a pinch of salt
  4. Microwave about 1.5 minutes or until the water is absorbed.  Stir every 20 seconds.  (Note:  times may vary and this will depend on your microwave.  After the first time you make it, you’ll know exactly how long to microwave it for the next time.)
  5. Let stand for a couple minutes.
  6. Add dried fruit or nuts.
